Cooking Saffron Sela Basmati Rice, Afghani style

Ingredients:

2 cups Sela Basmati Rice (for 3 Person)

  • Water (enough to cover rice by 3 inches)

  • 1 cup of caramelized rice water (see sub-topic: How to Make Caramelized Water)

  • 1 tsp Zeera (cumin) powder

  • 1 tsp Cinnamon powder

  • Clean kitchen towel

Instructions:

  1. Soak the Rice
    Rinse the rice thoroughly and soak it in cold water for at least 1 hour. This helps soften the grains and ensures even cooking.

  2. Boil Water
    In a large pot, bring water to a boil. Use enough water to cover the rice by 3 inches. (add 1 Tsp of salt, 3 Tsp of oil)

  3. Parboil the Rice
    Add the soaked rice to the boiling water. Cook until the grains are soft but still firm — avoid overcooking, which can cause the rice to break.

  4. Monitor Carefully
    Stir gently and check frequently. The goal is to preserve the integrity of each grain.

  5. Prepare Caramelized Water
    While the rice boils, prepare your caramelized rice water. (Refer to our sub-topic for detailed instructions.)

  6. Drain the Rice
    Once the rice reaches the desired softness, drain the water completely using a fine sieve or colander.

  7. Flavor the Rice
    Return the rice to the pot. Sprinkle caramelized water evenly over the rice.

  8. Add Spices
    Lightly dust with Zeera powder and Cinnamon powder to taste.

  9. Steam Finish
    Cover the pot with a clean towel, then place the lid securely on top. This helps absorb excess moisture and enhances texture.

  10. Final Cooking
    Leave the pot on medium heat for 15–20 minutes to allow the rice to steam and absorb flavors.

  11. Serve & Enjoy
    Fluff gently with a fork and serve warm.
